Easy & Versatile Einkorn Breakfast Muffins

Buttery, sweet & oh so yummy, these einkorn breakfast muffins are just what mama ordered! Super simple with only about five minutes of hands on time, what could be better? Plus, using only honey or maple syrup as a sweetener, you don’t have to worry about a dose of processed sugar first thing in the morning!

One of the best things about these einkorn breakfast muffins is how versatile they are!

Serve them plain, or add in some blueberries or a jam spread for a change of pace, it is not hard for them to become a breakfast staple.

Plus, utilizing fresh-ground flour, you are capitalizing on all of the added benefits of utilizing whole grain einkorn.

Not only that, but einkorn, as an ancient – non-hybridized – grain, has a different gluten structure and less gluten overall than modern strains of wheat commonly used in baking (hard red, and soft white as examples).

This makes it easier to digest, and triggers less of an inflammatory response than aforementioned modern strains of wheat.

Disclosure – Regardless of the lower gluten content, if you have celiac disease, this grain is not for you as it does still contain gluten!

Having the right tools for the job makes everything easier!

  • Large Mixing Bowl: Having a mixing bowl large enough to add all the ingredients, and mix without worrying about spilling is key.
  • Whisk: A good, sturdy whisk will make it easier to break up the clumps in the batter.
  • Measuring Cups: One that measures liquid and dry ingredients effectively is best. Or using separate ones works just fine too.
  • Small Bowl: Having a small bowl to melt the butter in the microwave is super handy.

Muffin Ingredients

Dry Ingredients

  • 1 3/4 cup fresh-ground einkorn flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp cinnamon

Sweetner

  • 1/3 cup honey (or maple syrup)

Liquid

  • 1 cup milk

Fat

  • 1 egg
  • 1/4 cup butter, melted

How to Make Easy & Versatile Einkorn Breakfast Muffins:

Step 1:

Add flour, baking powder, salt, and cinnamon to a large mixing bowl.

Step 2:

Add your maple syrup (or honey), milk, and melted butter.

Step 3:

Mix all of the ingredients until well incorporated.

The batter might ‘puff up’ a little as the baking powder reacts with the liquid ingredients – making it more of a cake batter consistency.

Step 4:

Use a 1/4 cup to measure out the batter, pouring it into a well greased (or lined) muffin tin.

Step 5:

Place the muffins in the oven and bake for 18-20 minutes at 400 degrees Fahrenheit.

Once the muffins are done – a toothpick inserted in the middle comes out clean – pull out of the oven and let cool for 5-10 minutes before serving.

While these muffins are absolutely delicious on their own, this recipe is super easy to add blueberries, pumpkin, raspberries, etc. to for a little extra flare.

  • 1/2 cup fruit (any juice drained)
  • 1/2 cup pumpkin
  • 1/2 cup chopped nuts
